Now, in December, family celebrations are more, we turn to a private moment and romantic – Valentine's Day. This month I couple of chocolate with Port wine. While other wines to taste with chocolate, have an interesting past, ports and gaining popularity.
History
Because of the historical conflict between France and England, French wines have been banned at one point by the King of England. Portugal and Spain were more than happy to fill this gapwith their wine.
Portuguese is a spirit, to stabilize their wines their products during transport. Thus, "fortified" wines have emerged. To improve the quality of Portuguese wine, has traveled to Portugal, England and has worked with local wine producers. They discovered that the monks were in the liquor Douro Valley, add the wine early in fermentation process. This was a sweet product with a higher alcohol content. British merchants quickly set up warehouses in the cityPort on the Atlantic coast. This explains the port name and because they have English names, like the Dow, Warre and Graham.
Types
Today there are four basic categories: Ruby, Tawny, White and vintage.
Ruby ports are generally produced lower quality wine in barrels for two years. The wine is young, sweet and has a deep red color. Late Bottle Vintage Ports are of superior quality, which are from a single vintage, coming of age up to six years in cask andfiltrate. This LBV is generally served in restaurants, because there is no sediment.
Tawny ports are known for their yellow color, the product name of the aging in barrique. Moors are higher quality, tend to be lighter, complex, nutty and caramel notes. Died of a crop, the cane for at least seven years old are invited Colheitas. They are preferred by some of Vintage Port.
White ports are using white grapes.
Enter a port vintageWine a year and must pass a rigorous assessment of the Port Wine Institute of Portugal. Vintage ports are examined in barrels for two years, are not filtered and the bottle can be aged for decades. If 50 percent or more of the port is a crop to the standards of the Institute, then the year is declared vintage.
